EigenLayer delays re-staking window restart to February 5

On January 25th, Ethereum re-staking protocol EigenLayer announced that the date for reopening the re-staking window will be delayed by one week. The new opening time is February 5th at 12:00 PM Pacific Time and will continue until February 9th at 12:00 PM Pacific Time. When the window opens, three new LST tokens (sfrxETH, mETH, and LsETH) will be added, and there will be no limit on any LST tokens (including the three new ones). The window will then close again.
